Kiyomi is a Japanese white rum from the Helios Distillery in Nago, on the main island of Okinawa, Japan's southernmost prefecture, where sugarcane has long been farmed. Helios makes the rum from sugarcane molasses sourced from the surrounding plantations, ferments it, and distills it once in copper pot stills, a choice that keeps more of the cane's character than the multiple column distillations used for most white rum. The spirit is not barrel aged; instead it is rested for a period in steel tanks after distillation so it settles and integrates before bottling at 40% ABV. The result is unusually expressive for a molasses rum. One reviewer found a very fruity and vegetal nose of pineapple, stewed fruit, zucchini, rosemary, and a whisper of smoke, a palate of pineapple, green sugarcane, and white pepper, and a dry finish with pineapple and green, woody tones, drawing surprising parallels to rhum agricole.
