MHOBA is a farm distillery in Malalane, Mpumalunga, in northeastern South Africa, and one of the very few rum makers in the world working from fresh juice pressed from its own estate-grown sugarcane rather than molasses. The Shaldon is its high-ester overproof, named for Shaldon Engelbrecht, the distillery's up-and-coming distiller and assistant general manager. The juice is open-fermented for 28 days with ambient yeast and dunder, the spent wash from previous distillations, in a mix of roughly 70% cane juice to 30% dunder, and MHOBA also uses the Cousins Process to push ester levels higher, the same family of techniques behind funky Jamaican rum. It's distilled on custom high-reflux pot stills of stainless steel and copper, rested for two months, and bottled unaged at 63% ABV. US importer Skurnik describes punchy aromas of ripe pear, Twizzlers, sea salt, sweet cream, marker ink, and green olive, and a robust palate of strawberry jam, underripe pineapple, eggnog, jackfruit, nutmeg, almond cake, mint, and caper berry.
