Down Island Spirits Barbados 2011 Rum
Down Island Spirits is an independent rum bottler founded by Mike Streeter that releases single casks, one barrel per bottling, without sweetening, and this one comes from Foursquare in Barbados, the Seale family distillery in St. Philip that has become the benchmark for honest, additive-free rum. The rum was distilled in 2011, a blend of Foursquare's pot and column still distillates, and aged for 11 years before Down Island bottled it in 2022 from cask #V469-01. It goes into the bottle at full cask strength, 59.8% ABV (119.6 proof), with no reduction and nothing added, so what you taste is the distillate and the barrel. Tasters on RumX note raisin, dried fruit and caramel on the nose, followed by dried fruit, burnt sugar, caramel and toffee on the palate, the rich, rounded profile long-aged Foursquare is known for. Because each release is a single cask, the outturn is small and once it's gone that exact rum is gone. Pour it neat and give it a few minutes in the glass, then add a few drops of water to open it up at this strength.
