BroVo Douglas Fir Liqueur is the Pacific Northwest forest in a bottle, and one of the few American spirits that is literally seasonal. Every spring, in the days after Cinco de Mayo, the BroVo team drives out to replanted clear-cuts on the flanks of Mount Baker, Washington, where young Douglas firs are pushing new growth, and forages by hand: about six inches of the bright, tender spring tips, never more than a third of any tree. Those buds are infused into neutral grain spirit and the base is then re-distilled to pull the fir character through cleanly, after which it is sweetened with agave nectar and proofed with water. Four ingredients, nothing else: fir buds, spirit, agave nectar, water. BroVo's own description is that opening a bottle is like taking a hike in the forest, clean and fresh, light and herbaceous. It took a gold at the Beverly Hills Spirits Competition. Because each year's foraging sets the volume, it comes and goes.
