River Antoine Estate in the parish of St. Patrick, Grenada, has been making rum since 1785, and it still works much the way it did then. Its cane mill is driven by a historic water wheel rather than electricity, and the crushed cane fibre, the bagasse, is burned as fuel to heat the stills. The fresh-pressed juice of locally grown cane ferments wild with native yeasts and no temperature control, then goes through double retort copper pot stills. For most of its history the rum, sold as Rivers Royale, was drunk almost entirely on the island. This La Maison & Velier bottling is the unaged cane-juice rum at a full 69% ABV, and it is about as rustic as rum gets: retailers describe powerful notes of fresh cane, tropical fruit, olive brine, herbs, smoke, and earthy minerality, with an oily, concentrated texture.
