The Dorado is aged three years in American oak ex-bourbon barrels, which give it its golden color and a layer of vanilla and baking spice, and it is bottled at 40% ABV. Martí keeps its rums dry, with less than five grams of total sugar per liter, which lets them behave the way a classic cocktail recipe expects. The brand's tasting notes are detailed: a nose of apple cobbler, baker's spice, brown sugar, cashew, cherry, thyme, cinnamon, and coconut; a palate of crème brûlée, molasses, dried apricot, pineapple, vanilla bean, and toasted marshmallow, with a dry green-olive edge; and a finish of peppery winter spice and a touch of mint.
