Don Fulano is the tequila of the Fonseca family, made at NOM 1146 from blue Weber agave grown in the Los Altos highlands of Jalisco, and this añejo is the limited edition marking the brand's 20th anniversary. The agave for it matured around ten years in iron-rich highland soil. Production follows Don Fulano's usual method: the piñas are cooked in a low-pressure autoclave, juice is extracted with roller and screw mills, fermentation runs in stainless steel tanks with the distillery's proprietary yeast, and the tequila is double-distilled in copper pot stills. For the anniversary, the añejo was aged in oloroso and amontillado sherry casks alongside used barrels, then blended and bottled without additives at 44.4% ABV (88.8 proof), a higher strength chosen to carry the texture and complexity of the maturation. The producer's notes give cooked agave, dried raisins and figs on the nose; cinnamon spice, eucalyptus and green pepper on the palate; and almond, vanilla and sultanas on the finish.
