Clairin Sonson Cabernet-Haiti
Clairin Sonson is the fifth single-distillery clairin in Velier's Spirit of Haiti range, and the most divisive. It is made by Stephan Kalil Saoud at the family distillery in Cabaret, a village on the Arcahaie coast northwest of Port-au-Prince, founded by his father in 1932. The cane is Madame Meuze, the local variety, grown on the family's 25 hectares; once cut it is pressed and the juice slowly reduced to a syrup, then fermented naturally with the ambient yeast of the distillery and the fields, and distilled in a single pot still, built by Saoud's father, over an open fire. It is bottled with no reduction, filtration or additives at 53.2% ABV, the highest strength in the range. Velier describes pronounced herbaceous notes of lemongrass and basil on a striking yet approachable palate; reviewers find it far wilder than that, with cut grass, lime zest, sea salt, smoke, coconut and tropical fruit flying in every direction, and call it the most unique of the clairins so far. This is not the bottle to start with. It is the bottle for people who already love clairin and want the extreme end of it.
