Camazotz Pot Still Rum is an Oaxacan aguardiente de caña, a cane spirit made from 100% fresh sugarcane in the mountains of Oaxaca, Mexico, and named for the bat god of Mesoamerican mythology. It shares a heritage with rhum agricole and cachaça, being wildly expressive of its raw ingredient, yet it is more elegant and smoother than its counterparts, with nothing added and nothing taken away.
The liquid is clear in the glass with a beautifully expressive, terroir-driven aroma. It is mildly sweet and full of fresh sugarcane, vegetal grassy notes, and woody tones, with a long saline finish at 48% ABV. Sip it neat at room temperature to appreciate it, or use it as a base for a Daiquiri, a Ti' Punch, or a cane-forward Old Fashioned.
