Paranubes Oaxaca Aguardiente de Cana Rum
Paranubes is a cane-juice aguardiente from the Sierra Mazateca mountains of northern Oaxaca, made by maestro destilador José Luis Carrera and imported to the US by Skurnik. It's one of the bottles that brought Oaxaca's traditional cane spirits to American bartenders. Carrera grows his own cane organically on the family farm, mostly the heirloom Caña Criolla with some Caña Dulce, Caña Morada and Caña Dura mixed in, and presses the fresh stalks on a traditional trapiche. The juice ferments for about 48 hours in open-air pine vats with mesquite bark added, then goes through a single distillation on a small six-plate copper column still. It sees no aging and is bottled at 54% ABV (108 proof). The importer's notes describe tropical lime zest, star fruit and dried apricot balanced against pronounced vegetal notes of green olive, fresh grass, pickled cucumber and peppermint, finishing with a wisp of campfire smoke and a dash of brine. Think of it as Mexico's answer to rhum agricole or clairin: it makes an outstanding Daiquiri or Ti' Punch and stands up as a sipper for anyone who likes mezcal.
