Canary Orange Liqueur
Canary is a new California orange liqueur built to replace the triple sec in your margarita with something that tastes like actual oranges. It's made by Canary Natural Spirits in Redlands, in the old citrus belt of San Bernardino County, from Valencia and Cara Cara oranges grown on a single estate and hand-picked in one season. The fresh peels are macerated in a wheat-based neutral spirit, re-distilled to pull the clean orange oils forward, sweetened with organic cane sugar, and cut with water that's been triple-distilled and reverse-osmosed. After a month's rest it's filtered and bottled at 40% ABV, the same proof as a Cointreau, with no coloring and no additives, which is why it pours crystal clear. The nose is fresh-picked orange, orange oil, and orange wedge candy; the finish brings a touch of nutmeg and a pith-like bitterness that keeps it from reading as syrup. Use it anywhere an orange liqueur goes: Margarita, Sidecar, Cosmopolitan, White Lady. It also works over ice as a bridge between dinner and dessert.
