La Favorite Coeur de Canne 55% is the higher-strength bottling of the house white from one of the last family-owned distilleries in Martinique, founded in 1842 in Le Lamentin near Fort-de-France and run by the Dormoy family since 1905, where the cane is still crushed by a 1906 steam engine, the only one of its kind left working on the island, and everything is distilled, aged and bottled on site. Coeur de Canne, heart of the cane, is pure fresh sugarcane juice from the estate's own fields, cut by hand, given a long fermentation, run through the copper Creole column and reduced to 55% ABV, 110 proof, with nothing added, under the AOC Martinique. The extra five points of proof over the standard 50% bottling give it more weight and a longer, hotter finish without losing the grassy character that makes agricole what it is.
