The walnut Ratafià of Andorno has ancient origins — its production in the Cervo Valley documented as far back as 1600 in the monastery of Santa Maria della Sala. The harvest ritual is part of what makes this liqueur so singular: green walnuts from the renowned growing region of Viverone in Piedmont must be collected still wrapped in their husks on the night of June 24th — the "Day of Enchantment" — when according to ancient tradition the nuts carry their most powerful flavor. These freshly harvested green walnuts are then infused in pure alcohol alongside vanilla, cinnamon, nutmeg, mace, and clove for up to three months before water and sugar are added and the mixture rests for 48 hours in stainless steel before filtration and bottling. Giovanni Rapa devoted himself to perfecting this recipe when he founded his distillery in Andorno Micca in 1880, and the result remains one of Piedmont's most beloved and characteristic traditional spirits. Light amber in color, the nose delivers toasted nuts, baking spice, and dried fruit, while the palate is rich with vanilla crème caramel and roasted walnuts with a through line of warm spice — finishing slightly bitter-sweet and deeply satisfying.
