Chaucer's Mead is made by Bargetto Winery in Soquel, in the Santa Cruz Mountains, where the Bargetto family has been producing it since 1970, one of the longest continuous runs of commercial mead in the United States. It started as a side project: winemaker Lawrence Bargetto began experimenting with fruit and honey wines in the 1960s, filling the winery's redwood tanks during the summer months when they would otherwise sit empty, and the honey wine outlasted everything else. It is fermented from 100% pure raw honey, a blend of orange blossom, alfalfa and sage honey from hives across Northern California, with no artificial flavorings, concentrates or colorings, and it is not fortified: 10.5% ABV, all of it from the honey. Bargetto describes it as a dessert-style wine with honey and beeswax aromas, an orange-blossom note carried over from the honey, and a richness closer to a fine liqueur than a table wine. The winery suggests drinking it chilled, or warmed with mulling spices for a winter drink, and packages a small spice sachet with the bottle for exactly that. Best enjoyed within a year or two of purchase.
