Old Bardstown Bourbon Whiskey
Old Bardstown is a Willett family label, made today at the Willett Distillery in Bardstown, Kentucky, which the family owns and runs. The recipe behind the brand dates to the 1940s, and the current 90 proof version debuted in 2016. It's a classic Willett bourbon from mash to bottle: 72% corn, 13% rye and 15% malted barley, an unusually high malt share that adds body and cereal sweetness, cooked with limestone-filtered spring water from the estate, sour-mash fermented in stainless steel for three to five days with the house yeast, and twice distilled through copper and stainless column stills. It then rests at least four years in new, char #4 American oak barrels and is bottled non-chill filtered at 90 proof (45% ABV). Willett's notes describe cinnamon, pineapple upside-down cake and a hint of flint on the nose, a soft palate of butterscotch, apple skin, allspice and vanilla, and a dry finish of lingering tropical fruit and baking spice.
