Old Bardstown Estate Bottled Bourbon Whiskey

Old Bardstown is a Willett family label, made today at the Willett Distillery in Bardstown, Kentucky, which the family owns and runs. Estate Bottled is the label's original flagship and, in the distillery's own words, a benchmark for Willett's house bourbon recipe of 72% corn, 13% rye and 15% malted barley. Everything happens on the estate: the mash is cooked with limestone-filtered spring water from the property, sour-mash fermented in stainless steel for three to five days, and twice distilled, first through a copper and stainless column still and then through a Vendome copper pot still. The spirit ages six years in new, char #4 American oak barrels and is bottled non-chill filtered at 101 proof (50.5% ABV). That higher proof and extra age give it more weight and length than the 90 proof Old Bardstown. Willett's tasting notes are aromas of arugula, orange supremes, sea salt and clover, brioche on the palate, and a surging finish of toasted cinnamon and green apple skin. Rich enough to sip neat, with the proof to stand up in an Old Fashioned or Manhattan.
