Classic Junmai is the green-bottle house sake found in restaurants across America, brewed with no added distilled alcohol from Calrose rice polished to 70 percent and finished at a sake meter value of +3, round with savory complexity. The brewery maps how it changes with temperature: chilled it shows macadamia, chai spice, vanilla, cream and fresh bread; at room temperature minerality, crème fraîche, sourdough, custard, umami and apple; warmed to about 100°F it fills out with salted custard, cocoa nib, banana bread and toasted nuts.
