Premium Ginjo Nigori Semi-Sweet is the step up from the house Nigori Silky Mild: a cloudy, coarsely filtered junmai ginjo, which means the rice is polished further than an ordinary junmai and the sake is fermented slower and colder to draw out aroma, with no added distilled alcohol, and it is finished semi-sweet rather than fully sweet so the rice cream carries more lift and less syrup. The result keeps the creamy texture and the ripe fruit and rice-pudding character of nigori with a cleaner, more aromatic edge and a drier finish, and it comes in a 750ml bottle with the blue-and-white Nigori Premium label.
