Mio is the best-selling sparkling sake in the world, and unlike the rest of the Sho Chiku Bai line it is brewed in Japan, at Takara Shuzo's Shirakabegura brewery in Nada, the historic sake district of Hyogo Prefecture outside Kobe; Takara, founded in Kyoto in 1842, launched Mio in 2011 to bring new drinkers to sake and it became a phenomenon. It is made from Japanese rice and koji rice with no flavoring or added sweeteners, the sweetness and fizz coming from the brewing itself, and it is bottled at a gentle 5% ABV in a 750ml cobalt-blue bottle. The brewery describes aromas of peach, ripe persimmon, freesia and fresh bread, flavors of pear and peach with yellow rose and baking spice, and a gentle effervescence that reads sparkling, lively, sweet and fruity. Serve it very cold, between 32 and 41°F, in a chilled flute as a toast or aperitif, with light dishes, poured over fresh fruit for dessert, or as a base for cocktails.
