Sho Chiku Bai, pine, bamboo and plum, the three symbols of good fortune, is the flagship of Takara Sake USA in Berkeley, California, the first Japanese sake company to brew in America, since 1983, as the branch of Kyoto's Takara Shuzo, founded in 1842, working from Sacramento Valley Calrose rice and Sierra Nevada snowmelt, kosher, gluten free and sulfite free. Skyline is the most experimental bottle in the line, named for the trail above Takara's Berkeley brewery and labeled with a skateboarding cow, and it breaks from tradition by blending barrel-aged sake into the junmai, which adds acidity and a whisper of tannin the brewery compares to a rosé from Provence. It is brewed with no added distilled alcohol from Calrose rice polished to 80 percent and bottled at 16% ABV in a 750ml bottle. The brewery describes banana bread, cream cheese and daffodil on the nose, a palate of tart red cherry, orange pith, crème fraîche, plantain chips and a hint of vanilla, and a long, salty finish, a lovely, red-fruited sake built for the dinner table. Serve it chilled to about 50°F or gently warmed with roast chicken, charcuterie, shrimp, pork loin, grilled salmon or a wagyu steak.
