Down Island Spirits Paraguay 2016 Rum
Down Island Spirits is an independent rum bottler founded by Mike Streeter that releases single casks without sweetening, and this one comes from one of the least-seen rum origins anywhere: the OTISA distillery in Paraguay. Paraguay has a long tradition of cane spirits, but very little of it is ever bottled for export, let alone as a single aged cask. This rum was distilled on a column still in 2016, carries the marque CMHP, and aged for eight years before Down Island bottled it in 2024 from cask #10-143A at a full cask strength of 62% ABV (124 proof), unreduced and with nothing added. Tasters on RumX describe a grassy, vegetal rum that shows its sugarcane openly: yogurt, sugarcane, green vegetal notes and baking spice on the nose, then sugarcane, pear and a peppery edge on the palate. It's a lighter, fresher style than most rums with eight years of age, which makes it an interesting counterpoint to Caribbean molasses rums. A small single-cask outturn. Taste it neat first, then add water a few drops at a time.
