El Amparo Ron Equatorial Rum
El Amparo Ron Equatorial is a cane juice rum from Ecuador, made by Carlos Baque Zorrilla, a third-generation producer working a small craft distillery in Jipijapa, in the province of Manabí on the country's Pacific coast. The cane is a heritage variety called Cubana Negra, hand-harvested at around eighteen months, and pressed for fresh juice rather than processed into molasses. The juice ferments spontaneously with indigenous yeasts in vats of 1,000 to 3,000 litres for five to seven days, depending on how much sugar the cane carries, and is then distilled in a small copper still of about 500 litres, a pot with a short column, run in batches. The rum comes off the still at around 60% ABV and is bottled unaged at that strength, so what's in the glass is the distillate exactly as it was made. Tasting notes from the French retailer Whisky.fr describe ripe banana, gentian, iodine and tar on the nose with lemon and pineapple behind, a palate of black olive, lavender and geranium with chalk and cardamom, and a very long finish of cedar, menthol and acacia honey.
