Opthimus 15 Year Rum

Opthimus is the aged rum line of Oliver & Oliver, a rum house of Cuban origin based in Santo Domingo, Dominican Republic, that sources molasses-based distillates from Caribbean and Central American producers and ages and blends them in its own cellars in a solera, where younger rum is added to older reserves over the years. The age on the label refers to that solera: Opthimus 15 is blended from rums with reserves going back fifteen years, aged in American oak barrels that previously held bourbon. It's bottled at 38% ABV. It's the entry point to the range, and the house notes describe a clean, precise amber color, a subtle, aromatic nose led by honey, sweet orange, fine woods and vanilla, and an elegant, round palate with a soft attack where the honeyed notes keep building into a medium-long finish with touches of pastry.
