Opthimus 18 Year Rum
Opthimus is the aged rum line of Oliver & Oliver, a rum house of Cuban origin based in Santo Domingo, Dominican Republic, that sources molasses-based distillates from Caribbean and Central American producers and ages and blends them in its own cellars in a solera, where younger rum is added to older reserves over the years. Opthimus 18 is the step up from the 15: the solera behind it holds reserves going back eighteen years, and the extra time in oak gives a fuller body and deeper color. It's bottled at 38% ABV (76 proof). The published description calls it a full-bodied, smooth Dominican rum, with fruity aromas joined by caramel and vanilla on the nose, a smooth, well-balanced palate where fruit, vanilla and light caramel sweetness are tightly integrated, and a long, pleasant, warming finish.
