Opthimus 21 Year Rum
Opthimus is the aged rum line of Oliver & Oliver, a rum house of Cuban origin based in Santo Domingo, Dominican Republic, that sources molasses-based distillates from Caribbean and Central American producers and ages and blends them in its own cellars in a solera, where younger rum is added to older reserves over the years. Opthimus 21 draws on a solera with reserves reaching back twenty-one years, matured with tropical aging in the Dominican Republic in American oak barrels that previously held bourbon. It's bottled at 38% ABV. The house tasting notes describe an amber color with red highlights, a smooth, attractive nose of toffee and banana, and a concentrated palate with a very soft attack of vanilla and butterscotch over melted exotic fruit, closing on a spicy finish. The ex-bourbon casks bring vanilla and toffee, while the long tropical aging deepens the fruit and adds the spice that sets the 21 apart from the softer, more honeyed 15 and 18. Sip it slowly from a snifter, neat or with a few drops of water, and let it open up in the glass.
