Opthimus 25 Year Rum
Opthimus is the aged rum line of Oliver & Oliver, a rum house of Cuban origin based in Santo Domingo, Dominican Republic, that sources molasses-based distillates from Caribbean and Central American producers and ages and blends them in its own cellars in a solera, where younger rum is added to older reserves over the years. Opthimus 25 is the top of the core range: the solera holds a maximum of twenty-five years of reserves, aged in American oak barrels that previously held Kentucky bourbon. It's bottled at 38% ABV. The house notes describe a strong nose of brown sugar and sugar cane with floral notes, spice and cinnamon, a smooth, oily, viscous and powerful palate of brown sugar, cane, cinnamon, spice, flowers and vanilla, and a very long finish of cinnamon, honey and sugar cane. Compared with the younger bottlings, the 25 trades some of the fruit for weight and spice, with a texture that coats the glass. Pour it neat in a snifter, give it time to open up, and sip it slowly after dinner.
