Description: Claridad Mezcal Espadín Capón is a premium artisanal mezcal produced in Bramaderos, Miahuatlán, Oaxaca, by maestro mezcalero Onofre Ortíz Ortíz. This expression is crafted from 100% Espadín agave (Agave angustifolia) using the traditional capón method, where the agave's reproductive stalk (quiote) is cut at maturity, allowing the plant to remain in the field for an extended period. This process concentrates sugars in the heart of the agave, resulting in a richer and more complex spirit.
The production involves cooking the agave in an oak-fired conical stone oven for three days, followed by a three-day rest. The agave is then milled using a combination of axe, machete, and small mechanical grinder. Fermentation occurs over five days in cypress wood tanks (tinas) using ambient yeast and well water. The mezcal is double-distilled in an alembic copper pot still, resulting in a spirit with a 48% ABV.
On the nose, Claridad Espadín Capón offers mellow aromatics, while the palate is rich and dense with a texture reminiscent of sweet cream. Flavor notes include milk chocolate, clothbound cheddar, fresh bark, roasted carrots, baking spices, and toasted hazelnut.
