The Bitter Truth Olive Bitters is a savory bitters from the German house run by Stephan Berg and Alexander Hauck in Pullach, just south of Munich, and it exists for one reason first: to give a Dirty Martini its olive-brine character and texture without the cloudy, inconsistent splash from a jar. It is bottled at 39% ABV in a 200ml bottle with no sugar, no coloring, no preservatives and nothing animal-derived, and the one declared allergen is mustard seed. The brand describes salty aromas of green and black olives with a touch of vinegar, then brine, mustard, garlic, sage and thyme on the palate with a gentle bitterness behind them. The house Dirty Martini is 60ml vodka, 10ml dry vermouth and two dashes of the bitters, stirred and strained, but bartenders have taken it well past that into aperitif drinks with sherry, vermouth and other fortified wines, a savory daiquiri with cucumber and celery bitters, an Olive Sour on blanco tequila or gin, and a Negroni variation with olive bitters and orange zest. It made the top ten for Best New Product at the 2017 Spirited Awards.
