Tom Warner and Sion Edwards met in agricultural school, and in 2012 they turned the Warner family's Falls Farm in Harrington, Northamptonshire into a distillery — the gin named for the village itself. That farming background still defines the operation: botanicals grown on-site, spring water drawn from a borehole 300 meters from the stillhouse, and everything distilled in a 500-liter copper pot still nicknamed "Curiosity," after a cat that left its paws in the distillery's wet cement. Harrington Dry is the flagship, built from 11 botanicals including homegrown elderflower alongside juniper, coriander seed, angelica root, lemon and orange peel, cardamom, cinnamon, black pepper, and nutmeg, bottled at 44% ABV — the strongest and boldest in Warner's range. Expect citrus and baking spice on the nose, with cinnamon, nutmeg, and cardamom prominent, opening into a complex palate where juniper and cinnamon lead before coriander, black peppercorn, and angelica flash through, finishing long and dry. The Gin Is In described a Garam Masala-like spice character — warmth in timbre rather than heat — and called a G&T made with it "a spiced gin and tonic if there ever was one." One honest note: the cardamom runs assertive.
