Amargo-Vallet Angostura Bark Aperitivo Liqueur
Amargo-Vallet is a Mexican bitter liqueur made by Casa Vallet in Mexico City from a 19th-century family recipe. Its backbone is the bark of the angostura tree (Cortezas de Angostura), macerated with cherries, cloves and a blend of roots and spices, then bottled at a robust 45% ABV (90 proof) in a 750ml bottle. It was created as an aperitivo and digestivo in the European tradition and has become a favorite of bartenders looking for a bolder alternative to Italian amari.
The taste is intensely bitter and earthy with bittersweet dark chocolate, cherry, citrus rind and clove, finishing long and dry. Serve it neat or over ice as a digestivo, add a splash to a mezcal Negroni or a Manhattan for depth, or use it in small doses as you would bitters.
