    Royal Vallet is Mexico's original bitters house, and its story starts with a failed empire. Henri Vallet emigrated from France during the brief reign of Maximilian I, the Austrian archduke Napoleon III installed as Emperor of Mexico in 1864 — and when Maximilian was overthrown and executed three years later, Vallet stayed. By the 1880s he had become Mexico City's preeminent distiller of liqueurs and elixirs, and his formulas survive: Fernet-Vallet and Amargo-Vallet are still made to his original recipes by Ingeniero Jorge "Chicho" Rodriguez, now under Las Joyas del Agave alongside Mina Real Mezcal and other sibling brands. Fernet-Vallet is Mexico's fernet — cinnamon, clove, quassia, gentian, and cardamom at 35% ABV, lighter than Fernet-Branca and found in virtually every serious mezcal bar in the country. Amargo-Vallet is the bright, 90-proof angostura-bark bitter, macerated with cherry and clove, built to hold its shape in cocktails. Granada-Vallet, the newest, is a pomegranate-driven red aperitivo colored with Oaxacan cochineal, widely considered the best Campari alternative on the shelf and closer to Campari's own original recipe than the modern one.
