Gikyo means "chivalrous," and the name comes from a real 19th-century decision: when rice prices spiked, the small Yamachu Honke brewery in Aichi refused to raise its sake prices out of obligation to its customers. Founded in 1813 where the Kiso River meets Ise Bay, it's now led by 11th-generation brewmaster Masahiro Yamada, and the standards are genuinely unusual. Since the 1990s, roughly 80% of the rice they buy is Grade A Yamada Nishiki from Tojo — widely considered the best sake rice on earth, and released to only about twelve breweries in Japan, alongside names like Juyondai and Isojiman. Most brewers reserve Tojo rice for flagship daiginjo; Gikyo uses it across the range. This "50" is milled to 50%, which legally qualifies as Daiginjo — but the brewery refuses the label, considering "great ginjo" boastful and redundant. It's bottle-aged cold to let flavors settle. Expect pear, Fuji apple, melon, orange, and white chocolate on the nose, moving into a big-boned, powerful palate of sweet brown rice, almond, and honey, with integrated acidity and a crisp, tannin-like dry finish that wine drinkers tend to love.
