Kapriol Dry Gin traces back to the same 1948 alpine liqueur recipe as the brand's Old Tom, but takes a different path: no added sugar, and a technique that separates hops, bay leaf, and oregano out for cold distillation before rejoining the rest of the botanical blend. Distilleria dell'Alpe first began distilling in Bastia d'Alpago in the Italian Alps, and after the Maschio family — historic distillers from Conegliano — acquired the operation in 2002, they modernized the line in 2016 while keeping production rooted in San Pietro di Feletto, Veneto. Juniper and a full roster of alpine botanicals — bay leaf, angelica, chamomile, cardamom, caraway, coriander, gentian, lavender, hops, mint, oregano, rosehip, and rosemary — steep in wheat spirit for 15 days before distillation in 1940s wood-fired bain-marie copper stills. Notably, no citrus is distilled directly; instead, freshness comes purely from the herbs.
