Hana Yuzu Flavored Sake is a fruit-infused sake from Takara Sake USA, the Berkeley, California, brewery that in 1983 became the first Japanese sake company to brew in the United States, a branch of Takara Shuzo of Kyoto, founded in 1842 and the house behind Sho Chiku Bai. Hana means flower, and the line is built on Takara's California sake, brewed from Sacramento Valley Calrose rice and Sierra Nevada snowmelt water, then infused with natural fruit flavor and bottled at a gentle 8% ABV in a 750ml bottle, kosher certified, gluten free and sulfite free. Yuzu, the fragrant Japanese citrus between a mandarin and a grapefruit, gives this one the brightest, most aromatic profile in the line, with citrus zest and blossom over the soft rice sweetness of the sake. Serve it well chilled at about 50°F, over ice, or as the base of a cocktail, and pair it with sushi, grilled fish, salads or a yuzu highball topped with soda.
