Destilería Revés Prima Rosa Gin is a Mexican craft gin from Baja California built on a 100% corn spirit distilled five times and ten Mexican botanicals. Destilería Revés was founded by Hans Backhoff Guerrero, a winemaker and son of the founder of Monte Xanic, the Valle de Guadalupe winery that helped launch Mexico's modern wine movement, with partner Nicolás Biancamano; the project took shape in 2019 with former Rémy Martin master distiller Robert Lute advising on distillation, and its name, meaning "reverse," signals the house mission of putting Mexican corn at the center of fine spirits. Sommelier Sandra Fernández pushed the recipe beyond a purely Baja profile toward botanicals from across the country: wild lavender, rosemary and sage from the Valle de Guadalupe, hoja santa from Oaxaca, Yucatecan lemon peel, roses, epazote, ginger from Ensenada, juniper berries and coriander seed. The producer describes a herbaceous core of rosemary, sage and epazote softened by floral lavender and rose, with hoja santa, ginger and Yucatecan lemon underneath, balanced against the juniper and coriander backbone, and it is bottled at 40% ABV in a 750ml bottle with a hand-illustrated rose label. Pour it in a Gin and Tonic with a sprig of rosemary, a Negroni, or a Gimlet with Mexican lime.
