Destilería Revés is a craft distillery in Baja California built around a single idea: putting Mexican corn at the center of world-class spirits. It was founded by Hans Backhoff Guerrero, a winemaker and son of the founder of Monte Xanic, the Valle de Guadalupe winery that helped launch Mexico's modern wine movement, together with partner Nicolás Biancamano. The project grew out of years of planning with Backhoff's late father and took shape in 2019, with former Rémy Martin master distiller Robert Lute advising on distillation. The name means "reverse," and the house motto is to flip the tortilla, turning the humble corn spirit into something refined.
Everything starts with 100% corn distilled five times. Prima Rosa Gin layers ten Mexican botanicals on that base, from wild lavender, rosemary and sage of the Valle de Guadalupe to Oaxacan hoja santa, Yucatecan lemon peel, roses, epazote, Ensenada ginger, juniper and coriander. The range also includes Drako corn vodka and a line of Revés whiskies made from blue, white and yellow corn and finished in American oak, mezcal, Cabernet Sauvignon and port barrels.
