Old Charter Oak Finest Oak is the newest release in Buffalo Trace Distillery's Old Charter Oak series, the experimental line that ages the distillery's Kentucky straight bourbon in barrels built from different oak sources to show how much the tree shapes the whiskey. Earlier chapters used French, Mongolian, Canadian and Chinkapin oak; Finest Oak takes the opposite approach and goes back to American white oak, but only the best of it. The barrels were made by Canton Cooperage from hand-selected trees chosen for purity, tight grain and ideal seasoning, with the staves seasoned naturally in Kentucky's open air before coopering, and the bourbon was distilled from Buffalo Trace's Mash Bill #1, aged and bottled at the Frankfort distillery at 95 proof, 47.5% ABV, with no age statement. Buffalo Trace's own notes call out caramel and berries on the nose, vanilla and maple syrup on the palate, and a finish of oak, chocolate and pepper; retailer tasting notes add toasted oak, caramel cream, dried cherry, toffee, brown sugar and dark honey over a long, warm, slightly dry finish.
