Shimizu-no-Mai is the export line of Takashimizu, the Akita Shurui Seizoh brewery in Akita City in Japan's snowy north, where the name, meaning dance of spring water, was borrowed from a 1997 sake cocktail created at Tokyo's Hotel New Otani in the brewery's honor; the Pure series launched in the United States in 2009 as a US-only range built on Akita's own rice and water. Pure Snow is the cloudy junmai nigori in the frosted white bottle, coarsely filtered so fine rice particles stay in suspension, brewed with no added distilled alcohol from Miyama Nishiki sake rice polished to 60 percent alongside regular rice polished to 65, and bottled at 15.5% ABV in a 720ml bottle with a sake meter value of +3 and 1.6 acidity, which makes it drier and cleaner than most nigori on the shelf.
