    Shimizu-no-Mai, the dance of spring water, is the export label of Takashimizu, the Akita Shurui Seizoh brewery in Akita City in Japan's snow country, where cold winters, soft water and the prefecture's own sake rice have made Akita one of the great brewing regions. The name came from a 1997 cocktail created at Tokyo's Hotel New Otani by bartender Nobuo Abe in the brewery's honor, and in 2009 Takashimizu launched the Pure series as a range built specifically for the United States.

    Every bottle is junmai, brewed with no added distilled alcohol, and the series climbs by polish. Pure Snow is a soft, clean junmai nigori from Miyama Nishiki rice. Pure Dawn is a junmai ginjo that blends 45 and 60 percent polished Akita Sake Komachi for apple, pear and melon. Pure Dusk is the balanced, food-friendly junmai daiginjo at 45 percent. Pure Night, polished to 35 percent and wrapped in paper and cord, is the premium junmai daiginjo for an occasion. The frosted bottles in green, blue, white and black follow the hours of the day the names describe.
