The Rums of Mexico is a project from PM Spirits, the importer behind Alambique Serrano and 5 Sentidos, built to bottle the traditional cane spirits of Veracruz, Oaxaca, and Jalisco that locals call aguardiente, cañita, or simply ron. Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Caña Criolla comes from Pedro Bautista in Oaxaca, a second-generation aguardientero who works with heritage cane. The Criolla variety is pressed fresh and fermented for more than twenty days in closed 1,100-liter tanks, then distilled on a twenty-year-old four-plate copper column and bottled at 51.9% ABV. The long ferment gives it real backbone, but the character is clean and mineral, almost blanco-tequila-like in its clarity, with green cane, white pepper, and a dry stony finish.
