The Rums of Mexico Panela Rum
The Rums of Mexico is a project from PM Spirits, the importer behind Alambique Serrano and 5 Sentidos, built to bottle the traditional cane spirits of Veracruz, Oaxaca, and Jalisco that locals call aguardiente, cañita, or simply ron. Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Panela is Orlando Vásquez's second release and a tribute to his family trade: for generations they milled fresh cane, boiled the juice, and poured it into wooden cone molds to harden into panela, Mexico's unrefined whole cane sugar. Here those cones are rehydrated with spring water, fermented, and distilled on a four-plate copper column, bottled at 47.6% ABV. Expect coriander, lemon, clay, campfire, and vanilla cream over a mineral, oily palate, with a long earthy finish.
