Shimizu-no-Mai is the export line of Takashimizu, the Akita Shurui Seizoh brewery in Akita City in Japan's snowy north, where the name, meaning dance of spring water, was borrowed from a 1997 sake cocktail created at Tokyo's Hotel New Otani in the brewery's honor; the Pure series launched in the United States in 2009 as a US-only range built on Akita's own rice and water. Pure Night is the top of the series, a junmai daiginjo premium in a dark bottle wrapped in paper and tied with a cord, brewed with no added distilled alcohol from Akita Sake Komachi, the prefecture's own sake rice, polished all the way to 35 percent of the grain, a level reserved for competition-grade sake, and bottled at 16.5% ABV in a 720ml bottle with a sake meter value of +1 and 1.4 acidity. The brewery describes a fruity flavor with an elegant aroma, a taste that is deep and dense yet transparent in texture, sweetness that builds from light to substantial in the mouth, and a long finish. Serve it well chilled in a white wine glass on its own or with sashimi, scallops, crab or a celebration dinner.
