Made under maestro tequilero Héctor Dávalos from estate-grown, USDA Organic Blue Weber agave matured six years before harvest, it is cooked about 26 hours in 24-ton brick ovens, crushed on a roller mill, open-fermented roughly 46 hours in stainless steel with deep well water, a proprietary yeast and ambient yeasts, then double distilled in pot stills, first stainless steel and then copper, and rested about six weeks before bottling with nothing added.
