Tequila Cabal is the Montes family's additive-free, USDA Organic tequila from Amatitán, Jalisco, in the heart of the Tequila Valley. Known for its embossed horse-head bottle, a nod to the family's horse-racing heritage, the brand was long produced at the family's Las Americas distillery (NOM 1480) and now comes from their new Destiladora La Roca (NOM 1646), with production led by the younger generation under maestro tequilero Héctor Dávalos.

The process is traditional and slow. Estate-grown Blue Weber agave is matured six years before harvest, cooked roughly 26 hours in 24-ton brick ovens, crushed on a roller mill, and open-fermented in stainless steel with deep well water, a proprietary yeast and ambient yeasts. Every expression is double distilled in pot stills, first in stainless steel and then in copper, and nothing is added.

The lineup runs from the 80-proof Blanco, Reposado and Añejo in the horse-head "bar bottle" with pour spout, built for the back bar and the home cocktail station, to the Still Strength Blanco at 110 proof, a limited release that marked the opening of La Roca, bottled with a stopper made from volcanic rock unearthed during the distillery's construction.
