Viva México Special Edition Tahona High Proof Blanco is a limited blanco from the Vivanco family's Destilería El Ranchito (NOM 1414) in Arandas, in the Los Altos highlands of Jalisco, that swaps the distillery's roller mill for a tahona, the volcanic stone wheel pictured on the label, to crush the cooked agave the slow, traditional way and carry more fiber and earth into the fermentation. The agave is 100% estate-grown Blue Weber matured six to eight years on the family's ranchos at about 6,600 feet, roasted in brick ovens, tahona-milled, and open-fermented with proprietary and champagne yeasts and deep well water while classical music plays, the family's "Mozart method," then distilled twice in copper pot stills under maestro tequilero Sergio Cruz and bottled unaged at 48% ABV, 96 proof, in a 750ml bottle, kosher certified and additive-free. The importer's notes describe white flower, pear skin, cinnamon, yellow apple, strawberry, banana, tangerine, marshmallow and a hint of smoldering ash on the nose, with mint, peach, black licorice and eucalyptus on the palate and a touch of smoke and heat on the finish. The family has grown agave in Arandas since 1929 and founded El Ranchito in 1994, and this is one of the first special editions to reach the United States.
