Crafted by the Pacheco family at the Sol Tarasco distillery in Uruapan, this rum is produced from 100% fresh-pressed juice of the Caña Criolla varietal, a sugarcane cultivated at elevations exceeding 4,000 feet above sea level. The sugarcane is milled using a traditional water-powered mill, and the juice undergoes open-air fermentation for a minimum of 10 days, harnessing wild ambient yeasts. Distillation occurs twice in a 1,000-liter, wood-fired copper pot still, resulting in a spirit that is then aged in ex-Cascahuin tequila casks. This unique aging process imparts additional layers of complexity, introducing notes of agave, oak, and subtle spice to the rum's inherent earthy and tropical fruit flavors.
