Description: This spirit is derived from the Java varietal Santa Maria cane, harvested in Tlalixtac, Oaxaca, at elevations of 2,500 to 3,800 feet. Fermentation occurs in pine vats using ambient yeast. It is distilled by Rommel Krassel in February 2022 on traditional copper alembic pot stills. Afterward, it is aged for 21 months in virgin French oak within a dry climate, resulting in an 8% angel’s share. Scheduled for bottling in February 2024, it will be released at a cask strength of 64.4% ABV, with a total of 282 bottles produced. No water, sugar, or coloring has been added.
