Joto Junmai Sake
Joto Junmai is brewed by Eiko Fuji Brewery in Yamagata Prefecture, run by the 13th generation of the Kato family, and imported under the Joto label, a curated portfolio of family-owned Japanese breweries. Junmai means pure rice sake, made only from rice, water, koji, and yeast with no added alcohol, and Eiko Fuji uses rice polished to 70% or less to remove the fats and proteins on the outside of the grain.
The result stays true to the classic junmai style: rich and robust with a savory rice backbone, yet clean, fruity, and approachable, finishing dry at 15% ABV. It is a superb food sake that works chilled, at room temperature, or gently warmed. Pair it with grilled meats, yakitori, tempura, or a bowl of ramen.
