Date Seven is one of the most unusual projects in Japanese sake: seven breweries from Miyagi Prefecture, in the northern Tohoku region, take turns leading a collaborative Junmai Daiginjo, with each brewery contributing its own step of the process. Every release is an "episode," and this Season II Episode 2 is brewed in the style of Yamawa Shuzo, the lead brewery for the bottling, known for its clean, elegant, food-friendly sake.
As a Junmai Daiginjo, the rice is polished to at least 50% and brewed with no added alcohol. It shows a floral aroma, a silky texture, ripe-fruit notes layered over gentle umami, and a clean, lingering finish at 16% ABV. Serve it chilled in a wine glass. This 720 ml bottle is a collector's piece as well as a beautiful sake to share.
