IWA 5 Assemblage 4 is the fourth release of the sake created by Richard Geoffroy, who spent 28 years as chef de cave of Dom Pérignon before founding IWA in Toyama Prefecture. His idea was to bring the Champagne art of assemblage to sake: multiple rice varieties, yeasts, and brewing methods are blended over a three-week process to create a single harmonious whole. IWA is brewed at the Shiraiwa kura, designed by architect Kengo Kuma among the rice fields of Tateyama.
Assemblage 4 builds on the direction set by the earlier releases with more layering, sophistication, and precision. It is a Junmai Daiginjo of remarkable complexity, with ripe fruit, umami depth, textural richness, and a long, evolving finish. Serve it lightly chilled in a wine glass and let it open in the glass.
